Roast Chicken and Potatoes (Kotopoulo meh Patates Psites)

  • 1 whole chicken, rinsed, then rubbed with salt and pepper
  • 5 large potatoes, peeled and cut into pieces
  • Place in baking pan, salt and pepper the potatoes
  • Slice 1 stick of butter and place on chicken and potatoes
  • Pour at least 6 capsful of lemon juice over everything.
  • Bake at 425* for about an hour ( 45 – 60 minutes ), basting every 20 minutes or so.
