Okra (Bamyes)
Wash and cut the tops off 2 lb okra. If the okra is old, cut off the tips, too.
Sprinkle with salt and put on a tray in the sun for an hour or two.
Saute in 1/4 inch olive oil.
Remove okra and arrange in an even layer in a baking pan.
Rinse out frying pan.
Put in two large onions,sliced, and 2 cloves garlic, sliced, with a little water. Cook until the water is absorbed and the onions are soft.
Add 1/2 cup olive oil, 1 bunch parsley, chopped, and saute.
Preheat oven to 400* F.
Pour onion and parsley mixture over the okra in the baking pan.
Chop 8 tomatoes and layer on top.
Sprinkle with salt and pepper.
Drizzle with 1/4 cup of olive oil.
Bake at 400* F for approximately 30-40 minutes.
