Mama’s Health Soup

A few days ago, Mama called Zoe. I happened to be there, and Mama asked to speak to me. “Eh, Lulu,” she said, “I have a recipe for you.” She paused. “A healthy recipe.” Immediately I understood why I had been chosen as the recipient of the recipe. I am known as a vegetable-liker, and one who is not afraid of the word “healthy.” This reputation ignores all the other stuff I eat that’s not vegetables and not healthy, but reputations are hard to shake. I’m really sorry, Mama, but I did not make this and try to get Zoe to eat it. Maybe somebody else will make better use of this Health Soup recipe than I did. I will post it a service to humanity.

Ingredients:

1 head cabbage, chopped finely
1 celery with root, chopped finely
2 big onions, chopped finely
1 tomato, chopped finely
1 can mexican-style tomatoes
1 knorr bouillion cube - chicken or beef

What to do with them:

Boil them until the veggies seem done.
If desired, you can puree the soup in a blender.

    Thanks, Jenn! I do love veggies, but in tastier forms, for example, your Lebanesesque Cauliflower & Bruschetta di Roma, which I’m hoping to try this week.
